5 Minute Apple-Blueberry Mug Crisp

Simple 5 minute apple blueberry mug crisp

Finally. A recipe for the late night "I want something sweet, but don't want to bake for an hour to get it, or leave my house to buy it" treat. This simple apple-blueberry crisp can be made:

  • In 5 minutes or less
  • Inside your favorite coffee/tea cup
  • For quick and easy devouring
  • With simple ingredients you already have in your pantry

My hubby and I have been developing this recipe for the last 3 months (we are serious perfectionists when it comes to food) and we've finally found the sweet spot for this apple crisp (pun definitely intended). We decided to create a mug crisp for a few reasons:

  1. We are parents of a toddler and like most people raising small children we want to reward ourselves for keeping our little one alive while also avoiding any additional exertion of energy. 
  2. In pursuit of an easy and delicious dessert, all we could find were recipes for mug cakes. Don't get me wrong, cake is awesome, but sometimes you want something a bit cozier and gooier. 
  3. We wanted something that could be made in 5 minutes or less, but still taste like it took a couple of hours to make.

I'm also happy to report that in our quest for the perfect mug crisp, we discovered that this recipe is extremely versatile. It can easily be made gluten free or vegan and is perfect for any level of baker. Even if you're not into baking, but want to impress your friends, you could make this crisp in fancy ramekins to serve as the conclusion to a formal dinner party - and no one would know the difference. 

If this apple-blueberry mug crisp sounds like your cup of tea then read on for simple instructions to make your own!

STEP ONE: GATHER YOUR INGREDIENTS

  • 1 apple, diced into small pieces
  • 1/2 cup frozen blueberries
  • 3 tablespoons dark brown sugar (use coconut sugar to make vegan)
  • 1 heaping tablespoon all purpose flour (use a gf flour blend to make gluten free)
  • 1/4 cup granola
  • 3 tablespoons chopped pecans
  • 2 tablespoons butter (use coconut oil to make vegan)
  • dash of sea salt
  • cinnamon to taste

STEP TWO: MAKE THE FILLING

  1. Combine the apples and blueberries in a small bowl.
  2. Take the heaping tablespoon of flour and make it level with your finger over the bowl, so that the excess flour can be used to soak up the juices of the fruit and make a nice gooey filling once cooked.
  3. Next, add a tablespoon of the brown sugar and cinnamon to taste.
  4. Mix everything together with a spoon and set aside.

STEP THREE: MAKE THE TOPPING

  1. Combine 1/4 cup granola, leveled tablespoon of flour, 3 tablespoons of chopped pecans, 2 tablespoons dark brown sugar, dash of sea salt, and cinnamon to taste in a small bowl. 
  2. Next melt 2 tablespoons butter in the microwave (30 seconds on 100% power level) and add to your small bowl of dry ingredients.
  3. Stir together until the mixture forms a course, paste like consistency (see picture below).

STEP FOUR: FILL YOU MUG(S)!

OK, so you have two options here... Either make one large mug crisp for yourself (yum!) or you can share with a loved one (not as big, but still tasty). If you decide to spoil yourself and only make one mug crisp, you'll need to microwave your crisp for 4 minutes. If you decide to share then you'll only need to microwave for 3 minutes. 

For one "large" apple-blueberry mug crisp: 

  1. Add crisp topping to the bowl of mixed fruit filling, or add fruit filling to a large mug and add the crisp topping on top.
  2. Microwave on 100% power setting for 4 minutes.
  3. Let sit for 1 minute to allow topping to crisp.

For two "small" apple-blueberry mug crisps:

  1. Divide fruit filling mixture equally between two mugs of choice. You can also use microwave safe ramekins if you want to feel fancier. 
  2. Divide the crisp topping mixture and add to the top of the fruit filling mixture in the mugs. You can put more or less in each mug depending upon your preference. I love the crisp topping and David loves the filling, so normally I'll add more of the topping to mine. 
  3. Microwave on 100% power for 3 minutes.
  4. Let sit for 1 minute to allow topping to crisp.

*Note: the crisps will shrink after microwaving - this is normal.

STEP FIVE: ENJOY!

Step five is pretty self explanatory... eat and enjoy! If you've been successful in preparing your mug crisp (I see no reason why you shouldn't be) then the result will be a delicious, gooey, apple-blueberry mug crisp with a satisfying, crispy topping.
